Yellow Gazpacho

Serves 8

2 jalapenos, roughly chopped
8 medium yellow tomatoes, cut into 2.5-cm (1-in.) pieces
2 yellow peppers, cut into 2.5-cm (1-in.) pieces
4 scallions, roughly chopped
1 cucumber, seeded and cut into 2.5-cm (1-in.) pieces
240 mL (1 cup) fresh basil
30 mL (2 tbsp) fresh tarragon
30 mL (2 tbsp) balsamic vinegar
20 mL (1 tbsp) Worcestershire sauce
Salt and pepper to taste

Place all ingredients in the glass jar of the Oster Fusion blender. Work in batches if necessary. Cover jar with lid. Turn blender on, then select Food Chop from the Pre-Programmed Settings menu. Press Stop once desired consistency has been reached. Chill until ready to serve. Garnish with croutons and chopped scallions.
