Shredded Inhibitions Chicken SaladGet those boots knocking again with this simple, mood-boosting meal.

Spencer Walker's Shredded Inhibitions Chicken Salad

Serves 2

1/2 rotisserie chicken
1 head butter lettuce, cut into bite-sized pieces
1 avocado, peeled, pitted and thinly sliced
1 tomato, thinly sliced
1 mango, peeled and pitted
1 tbsp olive oil
1 tbsp Dijon mustard

Allow rotisserie chicken to cool first. Pull apart the meat in strips and then cut into cubes.

Lay out a bed of butter lettuce on each plate. Place a handful of pulled chicken on top of lettuce in the center of each plate. Surround the chicken with a ring of avocado slices, followed by a ring of tomatoes and a final ring of mango cubes.

Mix olive oil and Dijon mustard; drizzle over salad just before serving.
