Grilled halibut recipe with picture of Spencer Walker inset.

Serves 2

1 jalapeno or Serrano chili, deveined and seeded
1 tbsp honey
1 tbsp grated ginger
1 lb. slab fresh halibut
1 bunch asparagus
1 tbsp olive oil
salt
1 lemon wedge
1/2 avocado, thinly sliced

1. Finely dice chili. Combine with honey and ginger and mix into a marinade. Slather it all over the fish and refrigerate for at least 30 minutes.

2. Rinse asparagus and cut off the bottom third of spears. Smother in olive oil and salt.

3. Heat up the grill. Grill halibut until it turns from pink to white (about 20 to 40 minutes, depending on thickness), flipping once.

4. After you flip the halibut, grill asparagus alongside the fish. When the asparagus blackens and wilts slightly, remove from heat. Lay out the goods artfully on plates. Squeeze lemon juice over and garnish with avocado slices just before serving.
